How we make our Unicorn cheese
Raw milk received
Pasteurisation
Addition of ingredients (milk, starter cultures (penicillium candidum)
Vat filling & setting, addition of rennet (non-animal)
Cutting
Stirring
The curd is poured into our cheese moulds
Turning
Cheese salt is added to preserve and flavour
De-hooping
Curing
Packaging
Our cheese is then dispatched to various national markets
